🧂 Ingredients

  • 1/2 cup all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch of salt
  • 1/2 cup milk (any kind)
  • 1 egg
  • 1 tbsp melted butter or neutral oil
  • Optional: vanilla extract or cinnamon

👩‍🍳 Instructions

  1. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk milk, egg, and melted butter.
  3. Pour wet ingredients into dry; mix until just combined (batter will be lumpy).
  4. Heat a nonstick pan on medium heat.
  5. Lightly grease the pan, then pour in about 1/4 cup batter per pancake.
  6. Cook until bubbles form and edges look set (about 2 minutes), flip, and cook another 1–2 minutes.
  7. Serve warm with butter, syrup, fruit, cream or jam/kaya.

💡 Tips

  • Do not overmix the batter; lumpy batter = fluffy pancakes.
  • You can substitute milk with oat/soy milk or even yogurt thinned with water.
  • Test the pan heat with a small drop of batter: it should sizzle gently.
