- 1/2 tsp baking powder
- 1/4 tsp baking soda
- Pinch of salt
- 1/2 cup milk (any kind)
- 1 egg
- 1 tbsp melted butter or neutral oil
- Optional: vanilla extract or cinnamon
👩🍳 Instructions
- In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk milk, egg, and melted butter.
- Pour wet ingredients into dry; mix until just combined (batter will be lumpy).
- Heat a nonstick pan on medium heat.
- Lightly grease the pan, then pour in about 1/4 cup batter per pancake.
- Cook until bubbles form and edges look set (about 2 minutes), flip, and cook another 1–2 minutes.
- Serve warm with butter, syrup, fruit, cream or jam/kaya.
💡 Tips
- Do not overmix the batter; lumpy batter = fluffy pancakes.
- You can substitute milk with oat/soy milk or even yogurt thinned with water.
- Test the pan heat with a small drop of batter: it should sizzle gently.
